I suspect the main use for Skype though is to call other Skype users, as so many people have Skype on their PCs, Macs etc and such calls are free.
The N800 does indeed use a form of Linux called Maemo which is based on the Debian distro. The latest version of Maemo is OS2008, you can update the N800 to this version for free using the update wizard.

The N800 does not use symbian - it appears to be busybox-based Linux for ARM chips.
3 months of free calling to USA land lines was included with my N800/skype. After that, you need a skype-out balance.
There is a SIP client included with the N800, but I haven't gotten it to work with my SIP provider.
