Rice noodles can be a little tricky to use. If you pre-soak them in hot water they go nice and soft but when you come to stir fry them they will overcook. Soak them in cold water and add them while they are still slightly undercooked.

  • finally, somebody knows how to stir-fry at high heat

  • Tip: Wok needs to be smoking hot before adding veg & noodles and noodles needs to be dry as possible otherwise it's all gonna glue to your wok.
