Bob-omb Battlefield: Star 1
Difficulty: 1.
Of course being the first star in the game, naturally it's going to be easy. It's really hard to die against the Big Bob-omb, as if he even grabs you he can't even damage you directly, he can only throw you off the edge. You shouldn't have any problems with this star.

Bob-omb Battlefield: Star 2
Difficulty with shortcut: 1
Difficulty with no shortcut: 1.5
This "race" is no problem at all especially if you use the warp/long jump throughout it. He runs extremely slow for being named "Koopa the Quick", so don't even worry about this one.

Bob-omb Battlefield: Star 3
Difficulty: 1
This star is nearly impossible to die on, I suppose finding out where the island is at first is KIND of annoying? Maybe? No? Whatever, it's not hard at all and doesn't take long to get either.

Bob-omb Battlefield: Star 4
Difficulty: 2
This star is only a 2 because finding the red coins at first is kind of annoying. But being the small level that Bob-omb Battlefield is, it shouldn't take you longer than 12 minutes your first time playing with no guide, which honestly is really short for red coins.

Bob-omb Battlefield: Star 6
Difficulty: 3
I'll admit, figuring out this star is pretty tricky to start with, but once you know what you're doing it's not really that hard at all. Just avoid the chain chomp and you should be good to go.

Princess' Secret Slide: Under 21 seconds
Difficulty: 2
This slide isn't really that difficult, as long as you stick to the rules of being fast, (pushing forward, hugging corners, avoiding dying, etc.), you should be just fine, plus you don't even lose a life if you die on this level. So there's really no risk at all.

Princess' Secret Slide: Completion
Difficulty: 1
Not hard at all, especially with no time restrictions. Plus you don't even lose a life if you die. This star is, in my opinion, in the top 5 easiest stars in the entire game.

@hallowedbeeddie galaxy and galaxy 2 are masterpieces. extremely well made, the post game is crazy stupid difficult like mario games are supposed to be, arguabley the best soundtrack in any game i've ever heard, ever. it's just you can't go wrong with either game; truely they are works of art.

The ones that don't have cannons are Hazy Maze Cave, Tick Tock Clock, and Rainbow Ride.

TECHNICALLY, you can get 6 (the sixth being the 100 coins one) and the fifth one is TECHNICALLY possible right at the start of the game, but it's a million times easier with the Wing Cap as it was intended to be obtained with.
