I have a very similar technique, also with small spoons and only the hand (in the other videos I've seen, they use larger spoons and hit other boby parts, like the laps). However, I sometimes turn the left hand so that the spoons go between the palm of the hand (down) and the middle and ring fingers (up). This produces a lower sound when the spoons hit the palm of the hand.
