I guess that's why they deleted the scene. But I agree with you haven't played Stealth yet, only Guns Blazing.

Quick question, after rescuing Franklin is the fighting unavoidable, do you still get the Stealth achievement. The description says you have to be undetected.

Yeah there is no way to avoid that fight and yes you will still get the achievement

Yes you can do this on all 4 difficulties, And no as far as i can tell their costumes are not usable in multiplayer.
