Guy's here the reason they look different in this scene. Yoshitaka Amano (the creator of all the Final Fantasy Artwork) was who created the looks of the characters you see in this cutscene. So the creators if this version of the game decided to yse Amano's artwork for the opening movie of the game. (Yes this is part of the opening FMV's.) Look it up on the Final Fantasy Wiki, it'll tell you the same thing.

Bartz had better looks in Dissidia, I bet many people chose to play the 2d version or Dissidia instead of ps1
