This is my version of Aloo Chole. I tried to keep it simple by using easy to find ingredients, but if you have garam masala or other spices you want to add, go for it! Indian cooking is all about spices and exotic flavors! Many Indian recipes are also vegan, or very easy to adapt into a vegan recipe. You can sub vegetable oil for ghee (clarified butter) and soy yogurt for dairy yogurt in a lot of recipes. I love to use coconut milk too as a sub for yogurt. This recipe is a bit drier, not as saucy so it has less calories.

Ingredients:
5 diced red potatoes
5 small cloves garlic
1/2 red onion chopped
1 (16. oz) can diced tomatoes
1 (16. oz) can peas
1.5 cups chickpeas (or 16 oz. can)
1/2 cup chopped cilantro (also known as coriander)
1.5 cups organic brown rice (or basmati)
1 TB vegetable oil

Spices:
3 TB curry powder
1/2 TB cumin
1 teaspoon cayenne pepper
1 TB agave nectar (optional)
1 TB lemon juice
salt/pepper to taste

  • @thephleblady of course, glad to help! chickpea tacos are also yummy...I love to smash them up with a fork and add in mexican spices and jalapenos, so good!

    Love the look of your apartment. ^_^ Have you ever had this dish? If not, you should def. try it out! Other than the cheese..ugh. Hmm. I wonder what could be substituted in place of the dairy?

  • @RosElisabeth cool, I'll check it out! I use daiya and follow your heart as good vegan cheese alternatives. You could also make a "cashew cheese" by soaking cashews and blending them with seasonings and nutritional yeast. Its what I use for vegan alfredo sauce...its so good! thanks for the compliment on the apartment! I plan on doing an apartment tour video soon, I almost have the place how I want it now:)

  • Looks yummy! The only thing I would personally leave out would be the Cilantro. I've tried that and I don't like the taste at all. The rest looks tasty though. Personally I like my food very hot and always looking for new brands and bottles of hot sauce. I buy large jugs of hot jalapeno peppers and eat them right out of the jug. Habanero peppers are a bit brutal but I like to push it. OK OK so far I don't have the guts to eat a Bhut Jolokia but it's calling my name. Pain can be a challenge!

  • @MrZombieIsHungry Cilantro is a love or hate ingredient I've found. You could easily sub flat leaf parsley too, or fresh mint. I adore hot food! I tamed down this recipe quite a bit to make it a bit more accessible. I love adding fresh chiles and/or more cayenne pepper. you are braver than I! I don't think I could ever go that hot!

  • Looks good. My favorite veggie meal could also be served as a side dish. It's called Baked Orzo. I'm making it for supper tonight.

    Thinking I could make a food video on it, because it really is delicious.

  • @Catullus85 I really want one (we are very strapped for cash right now). I adore spinach, I love making a variation of this recipe with spinach actually, yum!

  • This looks amazing! I bet it would be good with some spinach wilted in at the end. Have you considered getting a rice cooker? I find that it is worth the investment, especially if you eat brown rice often, as it really cuts down on the cooking time.
