Looks like a challenging project you got there!
I think you have two options for those deep missing chunks of wood -
1 - Use a wood filler which is the same colour as the veneer. You can make filler by mixing sawdust and wood glue. Get a piece of wood the same colour as the veneer on the piano - looks like Walnut or Ebony and cut in to small pieces and collect the saw dust!
2 - Use filler then apply new veneer, or maybe really thin plywood (1/16th thick) and stain to match the veneer!

@Phrase I like the first option,,,there is a wood shop down the street that has some bits that may match up,,,I think this could work ,, I am a bit of an amateur

@Phrase Cheers I tried out your tip and it's working great. thank you for the good advice,, as soon as I get a new vid camera,, I will up load some tunes on the ol piano,, haven't played for 20 some years so grin and bare it,,, lol ol 60 stuff mostly. Cheers and be cool Dave D.
