I think you have two options for those deep missing chunks of wood -
1 - Use a wood filler which is the same colour as the veneer. You can make filler by mixing sawdust and wood glue. Get a piece of wood the same colour as the veneer on the piano - looks like Walnut or Ebony and cut in to small pieces and collect the saw dust!
2 - Use filler then apply new veneer, or maybe really thin plywood (1/16th thick) and stain to match the veneer!
@Phrase I like the first option,,,there is a wood shop down the street that has some bits that may match up,,,I think this could work ,, I am a bit of an amateur
