Coconut Flour is a delicious, healthy alternative to wheat and other grain flours. It is very high in fiber, low in digestible carbohydrates, a good source of protein and gluten free. It lends baked goods an incomparably rich texture and a unique, natural sweetness.

12 eggs
1 cup EVOO or coconut oil - sorry i think i forgot to mention in the video!!!
2 packs Stevia
1 tsp Salt
1.5 cups Coconut flour (sifted)
2 teaspoons Baking Powder

blend all ingredients , but coconut flour
sift in coconut flour
mix and transfer to loaf forms
sprinkle topping of choice, poppy seeds or sesame seeds
bake 40 min @ 350

  • has anyone tried it yet. is it sweet and have you tried it in one pan for a taller bread. also will it toast in the toaster when sliced

  • @octavalgenie It is sweet, even wo stevia. Coconut flour tasted like sweet fine fiberous ground grain,...i dont know how else to describe it.

    ive never toasted it, it was gone before i could experiment with it, lol

    be expecting an oilier eggier bread, it reminded me of french toast ...

  • FYI, Several of the "Gluten Free" websites I've been using to get my recipes from say that Bob's Red Mill is not the best for baking because it's too grainy. You may want to try Wilderness Family Naturals, Benefit Your Life or Aloha Nu Organic if you don't enjoy the grainier texture. :) Thanks for the recipe!

    The only thing I want to ask... 1 CUP of EVOO (Extra virgin olive oil)?! I used 1/4 cup.

  • @HCGBigGirlNot I understand that if you leave breads made with coconut flour in the fridge over night, the sweet coconut flavor and egginess diminishes quite a bit. Also, the texture is apparently much more agreeable.

  • Is the texture like bread that's made with regular flour? I've tried almond flour bread and flax flour bread and didn't care for the texture, it was really dense and had an odd texture I can't really describe. Thank you.
