This stuff should keep fine without refrigeration and the dried mushrooms are perfect if you need a long term storage version of this sauce.

@verdatum Actually both, First it is masticated then it macerates...
Definition of MASTICATE
transitive verb
1: to grind or crush (food) with or as if with the teeth : chew
2: to soften or reduce to pulp by crushing or kneading

@jastownsendandson I thought this at first, but it doesn't work in context of "the mushrooms have completely masticated." Letting it sit doesn't cause it to be "crushed or kneaded" any further. More importantly, this vid is fantastic and I'll be making some this weekend!

@verdatum Yes, in context of the sentence macerated would be much better. It is difficult to get me to say the correct thing anyway... Kevin usually writes the script and then I look at the script and throw it over my shoulder and go on to say it they way I would say it. Sometimes the translation is a bit sloppy. Thank you for your compliments, we have a lot of fun making the videos and eating the stuff.
