My first Amaranth harvest

This year I had 2 Greek Giant Amaranth plants growing in the garden. They were beautiful and I'll definitelly be growing more of them next year! In this video I show you what the seeds heads look like after cutting them off the plant and also what the seeds look like after drying and threshing them. Cool stuff! to me anyway :)

  • Know what? We just splutter a little whole spices in hot oil & saute & cook the leaves with cubed potatoes to make a healthy delish super nutritious dry curry, or knead it in the whole wheat flour & make shallow fried parathas...delish as a lunch or breakfast.

  • You forgot to mention that Amaranth grows wild, too. I have grown it from seed from Johnny's in the past, but I also have stripped seeds from wild plants and planted them. It volunteers every year.

  • @robpash It won't let me post the link, but basically somebody had work done on their front garden, so instead of putting it back to how it was they decided to make it an edible garden. Some miserable bastards next door didn't like how it looked and said it disrupted the look of the neighbourhood, and they complained. The authority went and agreed, telling them to return their garden to normal. Now its a court case. If she loses she faces 93 days in jail.

  • You made a reference to something that happened in Oak Park: someone getting in trouble for growing food? I googled my hand off, but I can't find what you are referring to. What happened in Oak Park?

  • Nice video. I live in MS so I'm pretty sure this stuff would grow great most of the year. I might plant a small patch next year. Thanks for the information =)
