This is my new favorite pasta dish. I've made it twice now and have a few tips: 1) a blender + more cream or milk works just fine if it's not creamy enough and 2) use panko crumbs - they're crispier, larger, and I kept burning normal bread crumbs and 3) dont start pasta till cauliflower starts becoming easy to break down (around 8min I found)

I have a couple of questions. What if I don't have one of those hand-blenders, how do I blend the ingredients, and do the breadcrumbs and cheese topping make a huge difference to it's taste?

If you add caramelized sweet onion and toasted pine nuts to cauliflower...this joins a very unique sweet flavor. It's how my Sicilian Mamma makes it!
