【材料】:海參12兩、杏鮑菇4兩、銀杏20顆、蔥3支、薑3片、紅蘿蔔7-8片、蠔油2大匙、醬油1小匙、糖半小匙、酒半小匙、太白粉半小匙、胡椒粉少許
【做法】:
1、海參洗淨,以斜刀法切片;
2、放入冷水中,加入薑片、蔥段、酒,開水滾煮川燙後撈出。
3、蔥切成段、紅蘿蔔切片、杏鮑菇切片,備用。
4、油1大匙先入蔥爆香,蔥呈焦黃、有香氣時撈出;
5、放入薑片及杏鮑菇、銀杏拌炒片刻;
6、加入一點水,放入海參、蠔油、醬油及酒繼續拌炒;
7、灑上適量胡椒粉調味,接著用太白粉水勾芡,即完成「雙杏燴海參」。
