I just use Bisquick and add soymilk, egg replacer and a little canola oil. They fluff up and taste just like pancakes with cow milk(my memory of cowmilk pancakes is 13 yrs old though!)
My next step is to be a vegan (I'm already a vegetarian), but I always wonder how hard it would be to adapt, and if there is a decent range of different recipes.
moby is a vegan who does not seem to eat a lot of green stuff, I have a similar situation myself. Practically the only greens i eat are rosemary (and other herbs) , green peppers and garden peas. Lettuce and cabbage are difficult to get down. Brockley I will eat if its very fresh and cooked just right.
Better yet, buy Sucanat or Rapadura instead-both sugar cane with only the water removed; both can be used in place of white or brown sugar, and neither are bleached and do not need to go through a bone char filter. Rapadura is a finer texture than Sucanat (which stands for Sugar Cane Natural BTW), but if Sucanat doesn't dissolve well enough for you, just whir it up in a coffee grinder for a few seconds first & it works great.
