@jwmtanner1 They're very similar, an editable mesh divides the object into triangles (Try it! in 3Ds max and you'll see triangles if you select faces) Whereas the editable polygons option divides it into square/rectangle/4-sided shapes. For gaming models they usually render models using triangles but some of the more fancy stuff in 3D modeling is done using the 4-sided ones.

@wildboy789789 'Search Human Head Modeling [HD] for proof of concept.Japanese description. I didn't follow it step by step because that would be a nightmare with the 'timelapse' like method used to make the video but onces I knew its was possible I tried over and over till I got my time under 2 hours. I can show you a character I used the method on. I'm not saying box isn't another way to start as well as spline cage with patches, it just matters on the final product which would take less work.
