Ashrafi's "Sohan Asali" is honey toffee as made by "mohammad sohani" or 'toffee mohammad' who pioneered this sweet in Iran based on a toffee product which was made at the time in north east of iran. Please note Sohan Qom is very diffrent in taste, texture and production to Sohan Asali.
Haj Mohammad was also known as mohammad zulbiyai that is mohammad the sweet maker! a legend in his own time.
As times change, Haj Mohammads Son, Haj Abbas took over this tradition and after 30 years of guarding the secret and producing this unique sweet, moved to Australia with his family for a short period. On his return he took on several apprintices and the Sohan has found new makers to keep the tradition going.
However a few of the secrets to the toffee are still kept by the Grandson of Haj Mohammad - Mohammad ( that is to say myself! and no I am not a Haji ...not yet anyway ) and from time to time I make this at home for my friends :)

  • @bushehr any cook book will have a basic recipe for Sohan. This particular video is not intended to be educational as the exact amounts of the various ingredients are secret.

  • I love Sohan! I remember eating it years ago in Qom. I wish the ingredients and amounts were written here, so I can try making it!

  • OMG!!!!! our persian friend brought back this sohan, from the company. it is outstanding,. i was hoping to fnd a recipe and came across this one instead, if you know someone traveling to iran, tell them to bring you back some. it comes in a red tin.
