An over extracted shot can be caused by incorrect grind (too fine) packed in group handle too hard / tight group head not flushed out correctly / build up of coffee in the group head too much coffee in the group handle an incorrectly adjusted machine
You can tell a shot is over extracted if It tastes bitter Extracts out too slowly and has a thin dark crème Has a burnt/black ring around the outside of the crème
