Boy Scouts from Troops 54, 6 & 129 discover how easy outdoor cooking is when using cast iron camp style dutch ovens. They cooked a double recipe of Humboldt County Fried Chicken using 20", 16" & 14" ovens, which also included an awesome gravy made from the seasoned drippings. They also cooked mashed potatoes using a 10" deep oven. Turning their attention to dessert, the Scouts teamed up to execute the perfect cobbler; Troop 54 Blueberry - Vanilla Cream Cheese Cobbler using 12" & 10" ovens.

HUMBOLDT COUNTY FRIED CHICKEN

Dry Mix Ingredients

• 1 cup all-purpose flour

• 1 cup bread crumbs

• 1/4 cup paprika

• 1/4 cup sage

• 2 tbsp. pepper

• 2 tbsp. salt

• 1 1/2 tbsp. garlic powder

• 1 tbsp. ground mustard

• 1 tbsp. thyme

• 1 tsp. ground ginger

• 1 tsp. ground oregano • 2 tbsp. Italian seasoning (optional)

Wet Ingredients

• 4 beaten eggs

• 1 qt. buttermilk

• 12 large chicken thighs with skin on


Gravy

• Drippings

• All-purpose flour

• Water Directions

Mix together dry ingredients and divide into two equal parts (Save one for later if possible)
Mix together beaten eggs and buttermilk in large bowl
Soak chicken thighs in wet mixture for one hour
Place one part of dry mixture in a shallow dish or zip-lock bag
Coat chicken thighs one piece at a time in dry mixture
Place one entire chimney of briquettes under 16" dutch oven
Place 1/2" olive oil in dutch oven and brown chicken on both sides in hot oil
Remove chicken from dutch oven and drain oil from oven
Place large trivet in bottom of dutch oven and return chicken to dutch oven
Bake for one hour using one ring of coals under the oven and two rings of coals on the lid
Remove chicken and trivet to make gravy
Mix 1/2 cup flour with 1 cup water and stir into drippings using left over coals to simmer
As gravy thickens continue stirring and add additional water or water and flour as needed.


Troop 54 Blueberry - Vanilla Cream Cheese Cobbler

Add...
12 oz. cream cheese
1/4 cup milk
1 cup powdered sugar
1 tablespoon pure vanilla extract
into an 8" D.O. Simmer and stir until consistent and set aside.

Lightly spray or coat inside of cold 12" D.O with olive oil and add...
18.25 oz. white cake mix
12 oz. can lemon-lime soda
into the cold 12" D.O. Stir until mixture is consistent.

Add...
2- 21 oz. cans blueberry pie filling (Fresh blueberries may be substituted)
vanilla cream cheese mixture
into the 12" D.O.

In a separate bowl mix and add...
17.5 oz. sugar cookie mix
1/4 cup egg substitute
1 stick of butter (melted)
into the 12" D.O. Place lid on top of oven.

Place the cold 12" D.O. over 10 briquettes and place 20 briquettes on oven lid.
Bake for 1 hour with quarter rotations of oven and lid every 15 minutes.

We're looking forward to camping more often with Troop 54 to relearn the art of using a campfire, instead of briquettes as a heat source to cook our food!
I was first introduced to camp style dutch oven cooking some forty years ago in Troop 54, by Scoutmaster Frank Jager, still the current leader of this troop after all these years.
Today's events completes the cycle of giving back to others what was so freely given to me...

  • oh yea i do remember telling some ghost storys too at night,,

  • I remember being in boy scouts I was a boy scout in the 1970s I used a dutch oven had to put hot coals on the lid,,,in my patrol unit on alot of the camp outs I was the only one that knew how to cook,,so I helped out my unit,,all the other guys had there scrambled pancakes,,ha ha ha,,not in my patroll,,it got kinda tricky during the winter camp outs,,tryin to keep the camp fire lit when it snows on ya,,alot of memories,,cooking ,,hiking,,,singing around the campfire,

  • I'm the one wearing the fedora (Indiana Jones hat) and the fringed suede jacket ( at 1:00) Everything was amazing.
