indeed, it's possible - and the ending sequence background sprite changes accordingly too !
however, you won't be able to accomplish this on just any course, so let's break it down :
basically, every course has 60 fruit of which 30 are melons and 30 are regular
12 pieces of the 30 regular fruit are lucky fruit
but how do we make that 30 ?
well, this depends on two factors : heart fruit and transformable enemies
while yoshi is super happy after eating a heart fruit, most shy guys (and certain swarms) can be transformed into additional lucky fruit by performing a ground pound
but in order to get 30 pieces in total, there will have to be at least 18 transformable enemies on the course
with a bit of strategy, the goal can be accomplished on the following courses :
▪ Treasure Hunt
▪ Surprise‼
▪ Rail Lift
▪ Cloud Cruising
▪ Poochy & Nippy
▪ Jungle Hut
▪ Shy Guy Limbo
▪ Ghost Castle
in this video, i demonstrate how to get 30 bananas in Rail Lift, as part of a video series revealing the four additional fruit sprites that can appear in the ending sequence of a course
the goal can also be accomplished with any other kind of lucky fruit,* but different fruit may require a different strategy than the one displayed here
as a rule of thumb, if there are any transformable shy guys within a certain area, you'll most likely want to trigger a heart fruit nearby
heart fruits are triggered by eating 6 pieces of the same fruit in a row, which means the 6th, 12th, 18th and 24th lucky fruit will be the trigger numbers for the quest
but plan your triggers carefully !
if a significant area has only one lucky fruit, but is not set to be your next trigger, continue thru the course and head back again when the numbers add up
*Jungle Hut will only be possible to complete with apples
@LoryskaEntertainment i never recorded the actual summary, but the total score given for eating thirty lucky fruit would be 3720 alone, whereas melons would be 1134 + 3000 for the 100 per melon bonus = 4134, so melons yield the highest score, nonetheless...

And what was the ending score?

@thisisntagoodname Poochy and Nippy was definitely the most intricate course to start off with, basically because of all the splitting pathways...took some time to memorize the route, but at least the remaining pathways could be skipped, as they only lead to melons...

Cool. I'm happy to see you did videos for the other fruits. :3 Must've been difficult.
