Recipe:
Serves 4
For the Mango Salsa:
2 Ripe mangos, peeled and diced small (watch video for peeling and seeding tips)
1 Navel orange peeled and diced small
1 Tablespoon fresh cilantro, chopped fine
2 Tablespoons fresh lime juice
Salt and pepper, to taste
For the Tilapia Taco Bites:
2 Fresh tilapia fillets, rinsed and patted dry with a paper towel
Private Selection® Mediterranean seafood grinder, to taste
1 Tablespoon olive oil
3 Tablespoons dry white wine
Tostitos® tortilla chips Scoops 1. Make the mango salsa by combining al of the ingredients into a glass bowl. Stir to combine and place in the fridge for at least 30 minutes. Can be made the day ahead.
2. Place a non-stick skillet over medium heat for one minute before adding oil. Season the tilapia fillets with the seafood grinder and place in the hot skillet. Cook for 2 minutes per side, or until fish begins to flake. Add the wine to the pan and swirl to deglaze.
3. Fill ½ of each tortilla scoop with the tilapia and top with the mango salsa.
Wine Suggestion: Sauvignon Blanc or your favorite beer
