Here it is, my apple cider process! This is the day after my latest shopping trip to Kodiak Fresh Produce, where I purchased a case of organic Fuji apples; 115 count for $45. I will get about 4 gallons from this box, or $11 per gallon. This is more expensive than what you get from the store, with one big difference. This cider is not pasteurized, which is a heating process done to kill bacteria. I have a hard time drinking pasteurized apple juice. It feels dead to me. There is a business out of Sedona called Sedona Sweet Cider that presses and sells unpasteurized apple cider for $18-20 per gallon. It is really tasty, as the purveyor, Apple Bob, uses a variety of apples in his cider blend, and he is great at it. However, I prefer my cider. Maybe it is the extreme freshness. Anyway, I do recommend Sedona Sweet Cider's nectar. They should be back in the farmer's markets by now; Roadrunner Park and Downtown Scottsdale.
