This is probably my all time favorite as it is extremely easy to cook, is economical and has the perfect combination of fat, meat and the delicious crispy skin that we call 'crackling' in England. When I was growing up, we used to fight for the crackling if this was served for Sunday lunch. In America, pork belly is hard to find and I go to my local Asian supermarket and buy four or five at a time and freeze them. You can buy the meat either on the bone (ribs) or not and it does not make that much difference which one you buy, although you can enjoy eating the meat off the ribs if you buy it on the bone.

    Yes you can do this with lamb, but you must use the shoulder where there is plenty of fat. With beef, you could use a brisket.

  • This looks amazing. Can anyone tell me how I can find the insert for the pan that he used for the roasted pork? Every roasting pan I have seen has the very low, curved insert (the one you put a turkey or roast on). I can't wait to make this but I just don't have the right pan for it.

  • Usually today's nutritionists are in excellent shape to showcase their personal results.

    The cooking time creates high levels of carcinogens on the surfaces of these animal parts, though very high on the braised one.

    Did you see all the raw pork slime he got all over the stove, the oven handle, the kitchen counter? Sick! Perhaps in UK rotting pig flesh is not extremely deadly, in America it is, otherwise why cook it? <--you claim you are a natural carnivore, have some balls and just chomp!
