All the nutrition is in the skin of the potato, the rest is just starch. Starch is a form of carbohydrate which chemically is a form of sugar. Carbohydrate are used by the body to store energy as fat. So it's kind of counter intuitive :)
The green colors is something that comes when the potato is exposed to light and it's chlorophyll and a part of photosynthesis and it's not harmful. HOWEVER it's always followed by an increase in the levels of solanine WHICH IS TOXIC. Google "green potatoes"!

is it ok to eat the skin of the potatoes? Or only with this type of potatoe, because i have some potatoes who have a little bit greenish skin inside...

This twice-fry thing? It totally works, you guys. I just made them and they turned out pretty much perfect.
One note of caution: after the first fry these things are like boiled potato sticks. They're extremely delicate and liable to crumble/break if you aren't super delicate with them, and they're also very sticky - don't lay them on paper towels. Put them on a cookie rack or the like and dab them dry.
