In this video, Betty demonstrates how to make Spicy Mexican-Style Chicken Tenders. This recipe was sent to me by CptvonChaos, and its original name is "Sneaky Pete's Chicken Wings/Tenders." I mmediately loved the quick and easy recipe and got his permission to share it with all of you.

Ingredients:

chicken tenders and/or chicken wings (I used 2 pounds of chicken tenders, and these were quite spicy! You might want to use 3 or 4 pounds of chicken for the amount of coating, if you don't like them spicy.)
2 Mexican flavor packets—taco, chili, enchilada, fajita, burrito, etc. (I used 1 burrito packet and 1 taco packet.)
gallon-sized Ziploc plastic bag (I used a quart-sized bag, and it was a little small!)

Empty the two Mexican flavor packets into a gallon-sized Ziploc plastic bag. Toss chicken tenders and/or wings into the bag, a few at a time. Shake to coat. Place coated chicken pieces in a baking dish that has been sprayed with cooking oil spray or on a sprayed cookie sheet. Bake at 350 degrees (F) for about 30 minutes. Start checking them after about 20 minutes, and remove them from the oven when they are completely done. Serve immediately and enjoy!!! Thank you for the recipe, CptvonChaos! --Betty 

  • Using the idea for this recipe I made chicken wings. I lined a cookie sheet with aluminum foil and oiled it. Put the wings (Whole with the tips. Keeps the juices and flavor in.) ) in a big freezer bag and dumped in some olive oil and a pack of taco seasoning and shook it up real good. Placed the wings on the cookie sheet and baked at 350 (turning every 10 minutes to make sure they didn't stick). Great wings! Thanks for the idea, Betty!

  • I put a package of chicken tenderloin in the fridge this morning from the freezer and i was sitting here wondering what I was going to do with them! Now I know! :) These look delicious! :)

  • Dear, Betty, I've made this but only used half of each seasoning packets and added Panko breadcrumbs for some crunch. for a side yellow rice made with chicken broth instead of water tastes great,add some black beans,drained and some pineapple chunks and you have a great meal.

  • I made this the other day and really liked it, so i decided to make it another way tonight. I took boneless skinless chicken breast, and coated them with the taco/burrito seasoning mix, baked at 350 for 30-40 min. While it was baking i sauted up an onion, when the chicken was done i topped it with the sauted onion, and shredded monterey jack cheese, put it back in a few minutes to let the chesse melt. It was really good!
