  • brown rice koji will do

  • you can use other beans and koji, i don't know if malted rye without koji will make a miso

  • Great video! What is the basic recipe with quantities or where can I find a recipe? I have about 4 lbs. of white soybeans and I would like to try to make miso. Another thing, the video says the miso takes 6 months to 5 years. How do you know when it is done?
