I think you are right--the three cables are probably used to create some sort of alternating phaze by the ESC. The good part is that i can shift these 3 in any order to change direction according to the propeller.
Haha, yours makes very nice noise: axactly as fuel engine--may-be because its printed in my brain to associate wooden propeller's sound with fuel engine :) you could pull a pretty nice chunk of plane with the 2 kilo pull!

By the way, is it normal that my brushless motor (25A) cannot be started by normal current of up to 12V without the ESC? I still wait for the speed controller to come in the mail...
The motor just makes a short strong move and stops while buzzing.

good question, I'm not sure but the good thing about brushless motors is actually the ESC!
brushless motors have 3 wires and require an ESC, unlike brushed motors with 2 wires which you can run directly from the power source
