3. Pour the milk into a glass, but leave "1cm" empty
4. Place the metal spoon on the surface of the milk. If it stays on top, you are good to go with real milk.

One of the most obvious advantage of using this procedure is the cost of training. With only 30ml of milk wastage per trial, you wont have to buy many bottles of milk before you start making some latte art.
Secondly, because there is limited amount of milk, hence limited amount of protein (what helps the milk hold air) it is more difficult to create a perfect microfoam. If you were to create a perfect microfoam, you will have to make sure you make use of every single protein in your jug.
And lastly, once you get used to 30ml, when you go back to 100% milk you will realize how easy it is to texture your milk.
Also by placing the spoon on the top, you will be able to see if you texture your milk well. It is important that you leave 1cm on the glass as it will apply extra pressure on the froth when the spoon is placed on top. If you fill all the way up, the spoon test will be useless as it will float even without froth.
So make sure you leave 1cm.
I think this is an excellent method of practising how to steam milk correctly- particularly since I'm learning on-the-job at a local cafe and don't really want to waste large amounts before I get it right. Fantastic for developing correct technique! Thanks!
