made some muffins were good. i did not use muffin liners or butter pan so mine stuck and ripped and ya were looking to so hott, but there good

Apple Strusel Muffins
Topping:
1/2 Cup brown sugar, packed
1/4 cup all-purpose flour
1/4 teaspoon cinnamon
1/4 cup margarine, Softened

Dough:
1 1/2 Cup all-purpose flour
1/2 cup sugar
1tablespoon Baking powder
1/2 Teaspoon salt

1 Egg
2/3 Cup Milk
1/4 Cup Vegetable Oil
3/4 Cup Packed, peeled, shredded cooking apple

Preheat Oven to 400 Degrees F Makes 12 Muffins

Topping: Combine Brown sugar, flour and cinnamon in small bowl. Cut in margarine untill mixture resembles coarse meal. set aside.

Combine next 4 ingredients in large bowl, make a well in centre.

Beat Egg, Milk and cooking oil in small bowl. Add apple stir. Pour into well. stir just until moistened. Fill 12 muffin cups 3/4 full. divide and sprinkle topping over each

Bake for 15-20 min untill golden. Let stand in pan for 5 mins before removing to cool.

    it think the reason ur topping was smushy was because the butter or margarine is supposed to be cold. and ur supposed to use a fork lol.

  • ya thanks i later figured out i should not have melted the butter it is already soft

  • Cinnamon sugar is not the same thing as cinnamon. You don't melt the butter to make your topping, either. You just let it soften to room temperature. Well, at least you got the substitute of canola oil for vegetable oil right. Lovin' the chipmunk voice! LOL Remember, next time DON'T melt the butter, just let it soften!!
