Would it be okay to use a steamer instead of putting the fish in a glass bowl? I have a bamboo steamer pan. Can I use that? Are there juices that will run out or something, which is why it is best to use a glass bowl for the fish.

I think you're right on both counts. You probably could just use the bamboo steamer pan but you would also loose all the juice if it leaks through the pan. Good luck!

Nope. All the salt comes at the end when you add the soy sauce.

any white fish will do. You could do snapper. When you go to the fish store just ask which is best for steaming. good luck!
