I've seen 2 sims in the video: Falcon 4 Allied Force (or the old Falcon 4 with mods) and Lock On Modern Air Combat.
F4AF is the most realistic F-16 sim for the pc. Lock On is a little less realistic but has better graphics and you can fly more planes. But if you like to have full realism and if you like the F-16, then go for F4AF.
