Behold: a TWENTY POUND TURKEY! It's been marinaded and seasoned with Cajun rub like crazy for 30 hours. It's the biggest turkey that I've ever deep-fried. So monstrous that I nicknamed it "The Beast".
And it's about to go into a pot of 350-360 degree Fahrenheit cottonseed oil for 75 minutes (cooking at 3 1/2 minutes per pound).
As you can see I was exceedingly cautious - more than usual even - when it came time to lower the turkey into the pot. There's plenty enough reason why this is one of the most dangerous cooking activities you can undertake. I found that lowering and slightly raising it back up before gently putting it in further gives the oil extra time to fill the turkey's internal cavity. So it was that in spite of this being the biggest turkey I've done yet, the oil was far short of the top of the pot.

Was the camera person was cross eyed and thought they had the camera on the Turkey? I saw more of the person than the actual deep fry.
