That was a terrible experience; even if it was "supposed to be" underdone, the chef should have cooked it to order. At some restaurants, even if it'd be a travesty to cook a certain dish a certain way (for instance, asking for a tuna steak to be well done -- ugh), the customer's going to be eating it and paying for it, not the chef.
I don't like a lot of the things you are putting in that pan... but man does it ever look good!

i agree with you. and v.v. there are few good (unnoticed) restaurants in places where many people gather. i hope you find a nice one.
en passant, you are such a great cook. sunday kitchen gives tutorials not only on japanese cuisine, but italian and bla bla bla.
