【材料】:去骨雞腿2隻、綠苦瓜1/2條、紅甜椒1/2粒、辣椒1支、罐頭鳳梨2片、雞蛋1/2個、蒜末1大匙、豆鼓3大匙、鹽巴1小匙、太白粉2大匙、沙拉油1大匙、糖­1大匙、米酒1大匙、醬油膏1大匙、香油1大匙
【做法】:
1、苦瓜去籽與內膜,切成段,加入少許鹽抓馬靜置一旁,紅甜椒切段。
2、雞腿肉斷筋切成塊狀,入鹽巴、蛋液、太白粉抓馬醃漬2分鐘。
3、打一點水入苦瓜中,再抓馬一下可濾掉水分,去除苦味。
4、鍋中加油燒熱至160度,放入雞肉過油撈起,再放入苦瓜過油後,取出備用。
5、鍋中留1小匙油量以小火炒香蒜末與辣椒後,放入豆鼓,倒入一點水煮滾;
6、放入醬油膏、糖,加入苦瓜、甜椒、鳳梨和雞球,燜煮1分鐘入味。
7、關火,滴入香油,鍋邊嗆上米酒,拌炒均勻後即可起鍋。
