  • FYI - putting two bread pans in the oven half filled with water will accomplish the same thing without the potential to leak into the cheesecake tin.

  • @PacketsOfSwissMiss cant you still have a water bath, but have the cheesecake OUT of the water?

  • Yea the water bath method sure has helped my cheese cakes not to crack.

  • Spring form pans leak, so a water bath can be tricky that's why I use a pan called the cheesecake moat, they have a website where you can order one.

  • I did that, but the problem is even with a double layer of heavy duty foil, water seeped into the crust :( I have a springform pan with a removeable bottom. The cheesecake itself was delicious without browning and cracks, but the crust was soggy >:P
