Preheat broiler.

Heat about 1 tbsp of EVOO in ovenproof pan/skillet.

Add shrimp (deveined, cooked, tail-less), 3 minced garlic cloves, Creole Seasoning, & Black pepper to pan, sautee about 2-3 minutes.

Add 1/2 cup 99% fat free, reduced sodium chicken broth, chopped scallions and fresh parsley to skillet.

Stir and bring to a boil. Add a squeeze of lemon juice. Reduce heat to simmer, add a sprinkling of bread crumbs (about 1/8 cup).

Place skillet in oven and broil for about 2 minutes.

Steam rice and chopped spinach. Serve garlic over rice mixture. Enjoy!

    But how did you up with the brown rice ?

    I have no patience when cooking it.

    It takes way too long to cook for me ! :)

    gurl - i use either the boil-in-a-bag 15 min rice or the steamfresh brown rice if i'm in a hurry. i have the big bags, but usually i just do the quickie version.  a little more expensive, but worth it in time for me :-)
