【材料】:綠竹筍2隻、花枝1尾、蒜末5粒、蔥1支、辣椒1支、香菜1株、吉士粉100克、雞蛋1顆、奶油1大匙、雞粉1茶匙、胡椒粉1/2小匙
【做法】:
1、將綠竹筍切對半剝開外殼,切除外皮,將筍肉切成約6公分條狀,外殼做成盤飾。
2、蔥切成蔥花、將蒜頭切末、辣椒切圓片,備用。
3、將花枝洗淨,切成1公分寬6公分長,用蛋黃抓馬備用。
4、備一油鍋油溫160度,將花枝沾上吉士粉下鍋,油炸約2分鐘;
5、接著將竹筍裹上吉士粉下鍋,油炸約1至2分鐘,一起撈起瀝油。
6、取一炒鍋放入奶油炒香所有爆香料。
7、放入炸好的花枝和竹筍,灑上雞粉拌勻,最後拌入香菜,即完成「酥炸雙鮮」。
