Well, maybe they're more like meat triangles. Anyway, this is how my mother, grandmother, great-grandmother and all my aunties made them and how I have always made them,

What's in them?
ground meat, we always used 1 part each of beef, veal and pork.

For each pound of meat use one large egg and one stale Italian roll or some bread, soaked in water until mushy and squeezed out, a handful of Parmesan cheese, chopped parsley, a couple of garlic cloves finely minced and salt and pepper. Mix well and fry a little patty to taste for seasonings. Adjust the seasoning and fry as big or as small as you like. You can also bake them on parchment paper at 350* until cooked through or drop them into sauce in a crockpot raw. Don't stir them if you try this way because they will fall apart.

  • @AuntDuddie lol I need to be eating that. My neighbor always taught me to use beef, pork and ground lamb in my sauces and meatballs. I would need a grinder here if I were to make ground veal. I don't think anyone ever minds if they are triangle or squarish meatballs hee hee - coz they are all gone!
