This is my take on channa masala (cholay) which my family & friends rejoice. This can be served with puris, rotis, or rice. Please leave your comments.

Ingredients

Boiling:
Chickpeas - 1 cup
Green chili -1
Tea bag - 1 (remove it after boiling chickpeas)
Salt - 1 tsp

Coriander-ginger-garlic paste:
Coriander - small bunch
Garlic cloves - 4
Green chili - 2
Onion (small) - 1
Ginger - 1 inch piece
Cumin - 2 tsp
Coriander seeds - 1 tbsp

Gravy:
Tomatoes (big)- 4
Onion (medium) - 2
Cloves - 2
Cinnamon stick - small piece
Cardamom (crushed) - 2
Turmeric - 2 tsp
Chili powder - 2 tsp
Coriander powder - 2 tsp
Amchoor (mango) powder - 2 tsp
Tamarind concentrate - 1 tbsp
Salt to taste

Garnish:
1 Red onion sliced*
Coriander
Lemon or lime wedges

* Tip: soak the sliced onions in 1 tbsp of lemon juice. This will give a nice deep purplish colour to the red onions.

    Thank you for the recipe again, it turned out really good and I tried it with delhi style puri (one with yoghurt, onions, chapati atta, salt) It really goes so well with it. Loved it, thanks again. If you get a chance, do you mind giving exact ingredients so that I can write this one in my book.

    very clear and concise video and I like the fact that it looks like home made chhole instead of very read colorful chhole recipes that you see otherwise. Will try today and see how it tastes but I am sure it will be yummy. Just to clarify, you have used white as well as red onions in the coriander paste process right? Any specific reason? Thanks for the video.

    Hey! Thanks for your nice comments. I have used both red and yellow onions to balance the taste. The red onion has a mild and sweet flavour whereas the yellow onion is quite strong. Let me know how it turns out.

    Just made this. Used the tamarind concentrate instead of the amchur powder. Also used 2 tea bags for a darker color. This was so good! Will definitely make again. Thank you!!!

    This looks wonderful, an Indian friend took me to my 1st Indian restaurant and I had this dish there and it was wonderful!!! She then took me to the Indian market where I can purchase all the things I need for the dish. Thanks for sharing your version. I will make it today!
