There's many ways. If you use an emulator, then either use a screen recording program like hypercam or use an emulator with a record option. The other option is to use any of the console players, which are available for SNES (gameboy and only a few GBC) and Gamecube (GB to GBA).

Then use whatever method you want that you would to normaly record console play. Such as using adapters for the PC or burning the gameplay onto DVD and use on a PC.
