Actually, the dough was fully risen. She used a half batch for this demonstration, which is why the dough didn't crown outside the bowl like a fully risen full batch should.

You can't roll the hole dough. Then when it's cooked you wont be ably to tell it was hand-rolled. They should put me on this and make Auntie Annes look good.

I use to work here. I hated this job because I'd be standing allday just sampling. just so I could flirt with guys and make them buy. other than that food was great. price just to high, and my paycheck was worthless. just being honest :/

It's probably a lye solution (the original name is Laugenbrezel, Laugen means [basically] lye).
Baking Soda is a less dangerous substitute.
