    While "Sa" (the first note of the scale(or Thaat)) can be any note in Hindustani music, for the intents and purposes of understanding western music pov, "C" is most commonly considered "Sa" and therefore you can use C major as the basic scale to derive raga music from. If you really want to learn the hindustani system of music, you can get a good basis for understanding from reading a book like "Nad: Understanding Raga Music" by Sandeep Bagchee. Of course a teacher is best... :)
