Re: what happens at 04:46. At this point the host opens the lid of the cold-water jar (mizusashi). Up until now, only hot water has been used. The cold water is needed later on for rinsing the tea bowl a final time, and also to add a ladleful of water to the kettle at the very end. The symbolism of the latter means, "I am topping up the kettle so that there is enough water for more tea. Please know that you are welcome to return and drink tea as my again another time."
