That's brilliant! I'd say, try that again!
My own experience is: You need to have the plane's center of gravity exactly on the thrust vector of the rocket. In other words, the COG must be somewhere on the axis of the rocket. I have recently posted a video from a water rocket plane where this was not the case - same thing happened for me as for you...
Oh, and if you could get a tripod for the cam it would make it a little more pleasant to view .. but all the rest was great!!
