  • I've been using "Bain Marie's" (Water Bath) my entire life: custards, mock-steamed puddings, rice pudding, etc. Having NEVER made a cheesecake, I was puzzled as to HOW the water wouldn't penetrate into the springform pan; the recipes I viewed left that salient detail out of the instructions! This is a great, simple instruction video! NOTE: I always place my pan with the item to be baked in the oven FIRST, then pour in the boiling water, for safety reasons; less chance of scalding or spilling!

  • Once, many years ago, I made a cheesecake. Everything was perfect except I didn't know to wrap the foil around the springform pan. Well, you can imagine what happened. I've never tried to make cheesecake again.
