Once, many years ago, I made a cheesecake. Everything was perfect except I didn't know to wrap the foil around the springform pan. Well, you can imagine what happened. I've never tried to make cheesecake again.

I've been using "Bain Marie's" (Water Bath) my entire life: custards, mock-steamed puddings, rice pudding, etc. Having NEVER made a cheesecake, I was puzzled as to HOW the water wouldn't penetrate into the springform pan; the recipes I viewed left that salient detail out of the instructions! This is a great, simple instruction video! NOTE: I always place my pan with the item to be baked in the oven FIRST, then pour in the boiling water, for safety reasons; less chance of scalding or spilling!
