how did you get the quotes separate from the video it's attached to without going over the music?

It depends on which video editing software you use. I find where the quote are in the video, I record which part I like then I import it over the area of the song. I can adjust the volume of the quotes and try to remove any background noise and such. It's a pain staking way of doing it but it turns out quite well in the end. By the way, I use Adobe Premiere Pro. If you want help further just inbox me.
