What's for Dinner? Grilled Teriyaki Chicken Thighs

Greetings! Today was the first day of spring, we worked in the yard and garden most of the day preparing for our planting. I decided that it would be nice to have something on the grill for dinner. So I threw some stuff together and made a great marinade for some chicken thighs and I wanted to share it with you. Here is what you will need to make this recipe:

2 pounds of chicken thighs
½ Cup Pineapple Juice
½ Cup Soy Sauce
½ Cup Vegetable Oil
1 Tablespoon chopped fresh ginger
2 Tablespoons roughly chopped fresh cilantro
2 Tablespoons brown sugar
2 green onions roughly chopped
2 smashed garlic cloves

First I skinned the thighs and then I just mixed all the other ingredients together in a bowl. I placed the chicken in a zip top bag and poured the marinade over, you will want to remove as much air from the bag as possible and then seal and place in a pan in the fridge for a couple hours or all day or even overnight!

Rick grilled the chicken over indirect heat until it was completely cooked and the juices ran clear. This took about 20 to 30 minutes.

I served the chicken with some leftover rice pilaf that I made earlier in the week along with a big green salad and some homemade vinaigrette. This is what you will need to make the vinaigrette:

In a pint jar (or in a bowl with a whisk)

2 Tablespoons good dijon mustard
¼ cup lemon or orange juice or any juice you prefer
1 Tablespoon Honey
½ Cup Olive Oil (I used light)
Salt
Pepper

Put the top on the jar and give it a good shake until everything is well blended and emulsified. This will not separate in the fridge because of the addition of the mustard which is an emulsifier. Dress your salad and enjoy!

  • I think and this is just me why put oil in a marinade all it can do is coat the meat and stop the marinade from going into the meat, oil and water don't mix, also salt does not help eather it draws water from the meat. Don't fix us a plate just show us how you plate up your Grilled Teriyaki Chicken and please remove the burned skewers.

  • @hybridroswell Well, that is just how I do it. If you want to do it a different way and upload it for us to see, go ahead. We love it when others share! Since you only have one upload in the last 3 years, I'm not going to hold my breath waiting for that recipe.

  • We buy chicken thighs all the time - very inexpensive. I will try this.

  • @boomd1791 I love that the thighs are cheap. I have a bunch of chicken quarters in my freezer cause they go on sale for 49 cents a pound and I try to buy about 10 lbs at a time. So I am always looking for something to do with them. I hope you give this a try. They were really good! Noreen.

  • @ironhead41 I think these would be perfect on the foreman grill. I think that you could use this marinade for anything and I think I will be trying it on a london broil because I think that it would be good on beef. Hey, off the subject, but have you ever done dandelion wine? I was toying with trying my hand at some wine and you are the man! Thanks! Noreen

  • Love the idea of adding pineapple juice into the marinade! It serves 2 purpose. Tenderize & flavor = delicious meat! I will definitely try this!
