The footage you are watching has been transcoded 4 times before appearing on YouTube. The original video files show much less compression artifacts. Also, the blacks aren't nearly as crushed.
The S95 only shoots in automatic mode. There's also no zooming or refocusing while shooting. If you want to capture great looking video -- which is totally possible -- you really have to respect the limitations of shooting with a compact camera.
The S95 captures footage at 24 fps. This is a godsend for film enthusiasts and shows up well in the footage (check out the panning shots). The ~20MBit (variable) h264 encodings are well matched for 720p; macroblocking is almost nonexistent and high movement scenes are captured well.
does the cammera allow you to video & zoom at the same time?

Only after using CHDK modified firmware. (It runs off the SD card, so no risk to the camera.)
Zooming while filming is quite noisy, however.

@BeareTube Final Cut Pro. I prefer iMovie for smaller projects, but I needed to tweak a few of the clips. FCP gives a lot more control.
