Basically, all singers did "covers" until the 60s, when the Beatles changed the equation by recording mostly their own songs. However, the American jazz tradition, as well as blues, is to play and sing songs you like, and interpret them your own way. there is no "original' version except for the composers, and the vast majority of them really want other people to sing and record their songs.

@TomatoBasil23 Nina Simone's version actually kinda sucks, so yeah, most covers of this song DO exceed the original.
People are fucking idiots.
Everytime an artist does a cover song, people that are fans of the original blindly hate no matter what. Even if the cover version is good, they had on it because they don't like people singing other people's songs. Why so touchy feely about it?
Of course the original can never be exceeded, but there's nothing wrong with other people singing songs they themselves love.
