    The no-knead method relies on development of gluten strands that naturally occurs with yeast + substrate + time. I'm not bashing gluten-free bread, but let's not kid ourselves: it's a substitute for the real thing and requires tricks to get an "acceptable" approximation. That being said, search for glutenfreegirl + no knead bread. She's a recipe on her blog that has received good reviews.
