Oooh! You're new to XNA and the first think you wanna do is animating models... OMG! Just start with Tic-Tac-Toe, Space Invaders, Pong etc.. , make really nice 2d games like rpgs, and THEN slowly move to 3d. You don't even need a book, you just need PATIENCE, a lot of PATIENCE.
you can. They have libraries on codeplex that make it very easy for you to do so. Actually just a few lines of code plus the samples they give are pretty straight forward

XNA doesn't support 3D models animations directly... You need to code it yourself.
Look at it on the internet, or get a book =)
Books are always a good start!
